- 9 lasagna noodles

- 1/2 teaspoon dried basil
- 1/4 teaspoon garlic powder
- 1 egg
- 2 cups shredded mozzarella cheese
Instructions
- Preheat oven to 375°F. Cook lasagna noodles according to package directions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add onion and garlic, and cook until translucent, about 2-3 minutes.
- Add bell pepper, eggplant, and zucchini, and cook until tender, about 15 minutes.
- Add crushed tomatoes, oregano, salt, and black pepper. Stir to combine and let simmer for 10 minutes.
- In a medium bowl, combine ricotta cheese, Parmesan cheese, parsley, basil, garlic powder, and egg. Stir to combine.
- In a 9x13 inch baking dish, spread 1 cup of the tomato sauce on the bottom. Add a layer of cooked lasagna noodles, and a layer of the ricotta cheese mixture. Sprinkle with shredded mozzarella cheese.
- Repeat the layers of tomato sauce, lasagna noodles, ricotta cheese mixture, and shredded mozzarella cheese until you have used up all your ingredients.
- Cover with aluminum foil and bake for 25 minutes. Then remove the foil and bake for an additional 25 minutes, or until the cheese is melted and bubbly.
