The recipe calls for fresh vegetables such as zucchini, eggplants, and bell peppers, all high in nutrients and fiber. The creamy and savory ricotta cheese mixed with herbs and spices perfectly complements the veggies for a heavenly flavor combination.

Ingredients

  • 9 lasagna noodles
  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 4 garlic cloves, minced
  • 1 yellow bell pepper, chopped
  • 1 eggplant, peeled and chopped
  • 1 zucchini, chopped
  • 1 (28 ounces) can crushed tomatoes
  • 2 teaspoons dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 15 ounces ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon garlic powder
  • 1 egg
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F. Cook lasagna noodles according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add onion and garlic, and cook until translucent, about 2-3 minutes.
  3. Add bell pepper, eggplant, and zucchini, and cook until tender, about 15 minutes.
  4. Add crushed tomatoes, oregano, salt, and black pepper. Stir to combine and let simmer for 10 minutes.
  5. In a medium bowl, combine ricotta cheese, Parmesan cheese, parsley, basil, garlic powder, and egg. Stir to combine.
  6. In a 9x13 inch baking dish, spread 1 cup of the tomato sauce on the bottom. Add a layer of cooked lasagna noodles, and a layer of the ricotta cheese mixture. Sprinkle with shredded mozzarella cheese.
  7. Repeat the layers of tomato sauce, lasagna noodles, ricotta cheese mixture, and shredded mozzarella cheese until you have used up all your ingredients.
  8. Cover with aluminum foil and bake for 25 minutes. Then remove the foil and bake for an additional 25 minutes, or until the cheese is melted and bubbly.
  9. Let cool for a few minutes before serving. Enjoy!
