Eggplant Meatballs
Ingredients:
- 1 medium-sized eggplant (about 1 pound)
- 1/2 cup breadcrumbs
- 1/2 cup grated parmesan cheese
- 2 tablespoons chopped parsley
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, lightly beaten
- 2 tablespoons olive oil
Instructions:
- Preheat the oven to 375°F.
- Pierce the eggplant several times with a fork, then roast in the oven for 45 minutes or until soft.
- Cut the eggplant in half and scoop out the flesh into a bowl.
- Add the breadcrumbs, parmesan cheese, parsley, garlic, salt, pepper, and eggs to the bowl and mix until combined.
- Shape the mixture into meatballs, about 1 1/2 inches in diameter.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the meatballs and cook until browned on all sides, about 5 minutes.
- Transfer the meatballs to a baking sheet and bake for 15 minutes.
Easy Marinara Sauce
Ingredients:
- 1 can (28 ounces) crushed tomatoes
- 1/4 cup olive oil
- 1 onion, chopped
- 5 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes
- 1 teaspoon dried basil
Instructions:
- In a large saucepan, heat the olive oil over medium heat.
- Add the onion and garlic and sauté until softened, about 5 minutes.
- Add the crushed tomatoes, salt, black pepper, red pepper flakes, and dried basil.
- Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Use an immersion blender to puree the sauce until smooth.
- Season with more salt and black pepper, if necessary.
These eggplant meatballs are perfect on their own, as a side dish, or served over spaghetti with marinara sauce. They are a great source of protein and fiber, and are low in fat and calories. Serve them at your next family dinner or dinner party and watch as they disappear!
