Eggplant Meatballs

Ingredients:

• 1 medium-sized eggplant (about 1 pound)
• 1/2 cup breadcrumbs
• 1/2 cup grated parmesan cheese
• 2 tablespoons chopped parsley
• 1 clove garlic, minced
• 1/4 teaspoon salt
• 1/4 teaspoon black pepper
• 2 large eggs, lightly beaten
• 2 tablespoons olive oil

Instructions:

1. Preheat the oven to 375°F.
2. Pierce the eggplant several times with a fork, then roast in the oven for 45 minutes or until soft.
3. Cut the eggplant in half and scoop out the flesh into a bowl.
4. Add the breadcrumbs, parmesan cheese, parsley, garlic, salt, pepper, and eggs to the bowl and mix until combined.
5. Shape the mixture into meatballs, about 1 1/2 inches in diameter.
6. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
7. Add the meatballs and cook until browned on all sides, about 5 minutes.
8. Transfer the meatballs to a baking sheet and bake for 15 minutes.

Easy Marinara Sauce

Ingredients:

• 1 can (28 ounces) crushed tomatoes
• 1/4 cup olive oil
• 1 onion, chopped
• 5 cloves garlic, minced
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1/2 teaspoon red pepper flakes
• 1 teaspoon dried basil

Instructions:

1. In a large saucepan, heat the olive oil over medium heat.
2. Add the onion and garlic and sauté until softened, about 5 minutes.
3. Add the crushed tomatoes, salt, black pepper, red pepper flakes, and dried basil.
4. Bring to a boil, then reduce the heat and simmer for 20 minutes.
5. Use an immersion blender to puree the sauce until smooth.
6. Season with more salt and black pepper, if necessary.

These eggplant meatballs are perfect on their own, as a side dish, or served over spaghetti with marinara sauce. They are a great source of protein and fiber, and are low in fat and calories. Serve them at your next family dinner or dinner party and watch as they disappear!
