Eggplant Parmesan Recipe Easy Eggplant Kitchenswagger Fried

- 2 large eggplants, sliced into 1/2 inch rounds

- 1 cup grated parmesan cheese
- 2 cups marinara sauce
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- 1/4 cup all purpose gluten-free flour
- Olive oil, for brushing
Instructions:
1. Preheat the oven to 375°F. Line a baking sheet with parchment paper and brush with olive oil.
2. In a shallow dish, combine the gluten-free breadcrumbs, parmesan cheese, oregano, basil, garlic powder, onion powder, salt, and pepper. In a separate shallow dish, beat the eggs.
3. Dip each eggplant round into the gluten-free flour, then into the beaten eggs, and finally into the breadcrumb mixture, pressing the mixture onto the eggplant to make sure it's fully coated. Place each coated eggplant round onto the prepared baking sheet. Brush the tops of each round with olive oil.
4. Bake the eggplant rounds for 20 minutes, until they're lightly golden and crispy on the outside. Remove from the oven and spoon 1-2 tablespoons of marinara sauce onto each eggplant round, spreading it evenly. Return the baking sheet to the oven and bake for an additional 10-15 minutes, until the eggplant is tender and the cheese is melted and bubbly.
