You'll then stuff it with a mixture of onions, garlic, mushrooms, and diced tomatoes, and bake it in the oven until it's golden brown and tender. The result is a delicious and hearty meal that's sure to satisfy even the hungriest of appetites. To start, preheat your oven to 375°F. Take one large eggplant and cut it in half lengthwise.
