Traditional Italian Eggplant Parmesan Recipe How To Make Authentic Eggplant Parmesan

Eggplant Parmesan from Diethood
Ingredients:
- 2 large eggplants, sliced into 1/2-inch thick rounds
- 1/2 cup all-purpose flour
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 large eggs, beaten
- 1 cup Italian-flavored bread crumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- Fresh parsley, chopped, for garnish
Instructions:
- Preheat oven to 375F. Line two baking sheets with parchment paper and set aside.
- In a shallow dish, whisk together the flour, salt, and pepper.
- In a separate shallow dish, beat the eggs.
- In yet another shallow dish, mix together the bread crumbs and grated Parmesan cheese.
- Dip each eggplant slice into the flour mixture, then into the egg mixture, and finally into the bread crumb mixture, pressing to coat.
- Arrange breaded eggplant in a single layer on the prepared baking sheets and bake for 18 minutes.
- Turn over each eggplant slice and drizzle with olive oil, then continue baking for an additional 15-18 minutes, or until lightly browned and crispy.
- Spread about 1/2 cup of marinara sauce in the bottom of a 9x13-inch baking dish. Arrange half of the eggplant slices over the sauce, then spread half of the remaining marinara sauce over the eggplant.
- Sprinkle with 1 cup of shredded mozzarella cheese, then repeat with another layer of eggplant slices, sauce, and cheese.
- Bake for 25 minutes or until cheese is melted and bubbly. Garnish with fresh parsley and serve.
