Place the meatballs on a baking sheet lined with parchment paper and bake in the oven for about 20 minutes, or until they are golden brown and cooked through. While the meatballs are baking, you can start on the marinara sauce. In a large saucepan, heat the olive oil over medium heat. Add the minced garlic and cook for about 1 minute, or until fragrant. Add the crushed tomatoes, oregano, basil, salt, and pepper. Bring the sauce to a simmer and let it cook for about 10-15 minutes, or until it has thickened slightly. To serve, spoon the marinara sauce into a bowl or onto a plate. Place the eggplant meatballs on top of the sauce, and garnish with additional chopped parsley if desired. Serve hot and enjoy!
