Slow-Cooker Turkish-Style Eggplant Casserole
Ingredients:
- 2 large eggplants, thinly sliced
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 can (15 oz.) of diced tomatoes
- 1 cup of water
- 2 teaspoons of cumin
- 2 teaspoons of paprika
- 2 teaspoons of salt
- 1/4 cup of olive oil
- 1/4 cup of fresh parsley, chopped (for garnish)
Instructions:
- Place the sliced eggplants in a colander and salt them. Let them drain for at least 30 minutes.
- In a large pan, heat the olive oil over medium heat. Add the onions and garlic and cook until the onions are translucent.
- Add the diced tomatoes, cumin, paprika, salt, and water to the pan. Mix well.
- Add the sliced eggplants to the pan and stir to combine.
- Transfer the eggplant mixture to your slow cooker and cook on low for 6-8 hours.
- Garnish with fresh parsley and serve hot.
