Chicken "Noodle" Soup
Ingredients:
- 1 whole chicken, cut into pieces
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 carrots, sliced
- 4 stalks celery, sliced
- 1 tbsp olive oil
- 8 cups chicken broth
- 1 tbsp chopped fresh thyme
- 1 tbsp chopped fresh rosemary
- Salt and pepper, to taste
- 1 zucchini, spiralized
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the chicken and cook until browned on both sides. Remove from the pot and set aside.
- Add the onion and garlic to the same pot and cook until softened, about 5 minutes.
- Add the carrots and celery to the pot and cook for another 5 minutes.
- Add the chicken broth, thyme, rosemary, salt, and pepper to the pot and bring to a boil.
- Add the chicken back to the pot and reduce the heat to a simmer. Cook for about 30 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot and shred it with two forks. Return the chicken to the pot.
- Add the zucchini noodles and cook for another 5 minutes.
