Grilled Eggplant with Sweet Pepper-Tomato Topping
Ingredients:
- 1 large eggplant
- 1 teaspoon salt
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small onion, diced
- 1 can diced tomatoes, drained
- 1 tablespoon olive oil
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
Instructions:
- Cut eggplant into 1/2 inch thick slices and sprinkle with salt. Let sit for 15 minutes then pat dry with paper towels.
- Heat grill to medium-high heat and oil grates.
- Brush eggplant slices with olive oil and grill for 4-5 minutes per side or until tender and grill marks appear.
- In a pan over medium heat, add olive oil, diced onion, and bell peppers. Cook for 5 minutes or until the onions start to become translucent.
- Add drained diced tomatoes, black pepper, garlic powder, and cooked eggplant slices to the pan. Stir gently and heat through.
