To make this recipe, start by preheating your oven to 400 degrees F. While the oven is preheating, cut the eggplant into 1/2 inch slices and lay them out on a baking sheet. Drizzle the slices with olive oil and sprinkle them with salt and pepper. Place the baking sheet in the oven and roast the eggplant for 25-30 minutes, or until they are tender and lightly browned. Once the eggplant is done, remove it from the oven and let it cool for a few minutes. Now it's time to serve the roasted eggplant. To do so, simply arrange the slices on a serving platter and sprinkle them with chopped fresh herbs, such as basil or parsley. You can also drizzle the eggplant with balsamic vinegar, which will add a nice touch of sweetness to the dish. Next up, we have an easy baked eggplant parmesan recipe.
