Hey y'all, I've been experimenting with some recipes lately and I just found this amazing one for meat-stuffed zucchini boats! I can't wait to share it with you.
Meat-Stuffed Zucchini Boats
Ingredients:
- 4 medium zucchini
- 1 pound ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup tomato sauce
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F.
- Wash the zucchini and slice them in half. Use a spoon to scoop out the insides, creating little boats that you will use for the stuffing.
- Chop the scooped out zucchini and set it aside.
- In a pan, heat the olive oil and sauté the onion until translucent. Add the minced garlic and cook for an additional 30 seconds.
- Add the ground beef and chopped zucchini to the pan and cook until the meat is browned.
- Season with salt and pepper, and then add the tomato sauce. Let the mixture simmer for a few minutes.
- Arrange the zucchini boats on a baking sheet and spoon the meat mixture into each boat.
- Sprinkle the shredded cheddar cheese on top of each boat.
- Bake the zucchini boats in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and serve hot!

- 1/2 cup marinara sauce
- 1/2 cup shredded mozzarella cheese
Instructions:
- Preheat your oven to 400°F.
- Wash the zucchini and slice them in half. Use a spoon to scoop out the insides, creating little boats that you will use for the stuffing.
- Chop the scooped out zucchini and set it aside.
- In a pan, cook the ground turkey over medium heat until it is no longer pink.
- Add the onion, red bell pepper, and garlic. Cook until the vegetables are tender and the onion is translucent.
- Add the chopped zucchini, basil, oregano, salt, and pepper. Cook for an additional 5 minutes.
- Stir in the Parmesan cheese and marinara sauce. Remove from heat.

- Sprinkle the mozzarella cheese on top of each boat.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and serve hot!
