- 1 tablespoon olive oil
- 1 cup diced onion (1 medium)
- 1 jalapeño pepper, seeded and diced

- 32 ounces chicken broth
- 14.5 ounce can diced tomatoes with green chiles
- 14.5 ounce can crushed tomatoes
- 1 pound boneless, skinless chicken breasts
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the onion and jalapeño pepper and cook until the onion is translucent, about 5 minutes.
- Add the garlic, chili powder, and cumin and cook for an additional 30 seconds.
- Add the chicken broth, diced tomatoes with green chiles, and crushed tomatoes and bring to a boil.
- Add the chicken breasts and lower the heat to a simmer.
- Cook for 20-25 minutes, until the chicken is cooked through.
- Remove the chicken from the pot and shred it using two forks.
- Add the shredded chicken back to the pot and stir in the cilantro and lime juice.
