- 1 container (15 ounces) part-skim ricotta cheese
- 3/4 cup grated Parmesan cheese
- 1 large egg, lightly beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 24 jumbo pasta shells, cooked and drained
- 1 can (28 ounces) crushed tomatoes
- 1 cup heavy whipping cream
Instructions:
1. In a large skillet, cook sausage and eggplant over medium heat until sausage is no longer pink and eggplant is tender; drain.
2. Stir in parsley, basil, and garlic; cook 1 minute longer.
3. In a large bowl, combine the ricotta cheese, 1/2 cup Parmesan cheese, egg, salt, and pepper.
4. Stir in sausage mixture.
5. Stuff each shell with about 1/4 cup of the sausage mixture.
6. In a large saucepan, combine crushed tomatoes and cream; heat through over medium heat until heated through.
7. Spoon half of the tomato cream sauce into a greased 13x9-in. baking dish.
8. Arrange stuffed shells over sauce.
9. Spoon remaining sauce over top; sprinkle with remaining Parmesan cheese.
10. Cover and bake at 375° for 30 minutes or until heated through.
