Hey there foodies, Today I am sharing with you an amazing recipe that will make your taste buds dance with joy! It's a delicious eggplant ricotta bake with a twist of spinach. The dish is perfect for dinner parties or a cozy night in with family and loved ones. So, without further ado, let's get started! Firstly, let's talk about the ingredients you will need for this recipe. You will need one large eggplant sliced into rounds, 3 cups of fresh spinach, 2 cups of ricotta cheese, 1 cup of grated parmesan cheese, 1 egg, 1 tbsp of olive oil, 2 cloves of garlic minced, 1 tsp of dried basil, salt and pepper, and 2 cups of marinara sauce. To start, preheat the oven to 375°F. Coat the sliced eggplant with olive oil and season with salt and pepper. Place eggplant on a baking sheet and bake for about 15-20 minutes, or until the slices are tender. While the eggplant is baking, let's work on the ricotta mixture.
