Eggplant Potato and Ground Beef Moussaka

- 4 potatoes, sliced into rounds
- 1 pound ground beef

- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 tsp salt
- 1 tsp paprika
- 1/2 tsp black pepper
- 1/2 cup olive oil
- 1 cup breadcrumbs
- 1 cup grated parmesan cheese
- 3 eggs, beaten
- 1 cup milk
Instructions:
- Preheat the oven to 350°F.
- Heat the olive oil in a large skillet over medium heat. Add the onions and garlic and sauté for 2-3 minutes until softened.
- Add the ground beef and cook, stirring occasionally, until browned.
- Add the diced tomatoes, paprika, salt, and pepper, and stir to combine. Simmer for 10-15 minutes.
- In a separate skillet, fry the eggplant and potato rounds until golden brown.
- In a medium bowl, combine the beaten eggs and milk.
- To assemble the moussaka, spread half of the breadcrumbs on the bottom of a greased baking dish. Layer the potato rounds on top, followed by the meat sauce, eggplant rounds, and parmesan cheese. Repeat until all ingredients are used up.
- Pour the egg and milk mixture over the top of the moussaka and sprinkle the remaining breadcrumbs on top.
- Bake for 40-45 minutes until the top is golden brown and the filling is set.
- Let cool for 10-15 minutes before serving.
