Stuffed Eggplant with Sausage and Provolone Cheese
Ingredients:
- 2 medium-sized eggplants, halved lengthwise
- 1 pound Italian sausage, casings removed
- 1 large onion, finely diced
- 3 garlic cloves, minced
- 1 cup provolone cheese, shredded
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Directions:
- Preheat your oven to 400°F.
- Scoop out the center of the eggplants and brush the inside with olive oil. Season with salt and pepper to taste.
- Place the eggplant halves on a baking sheet lined with parchment paper and bake for 20-25 minutes or until tender.
- Meanwhile, heat olive oil in a skillet over medium-high heat. Add the onion and cook until soft and translucent.
- Add the garlic and cook for an additional minute.
- Add the sausage meat to the skillet and cook until browned and cooked through.
- Remove from heat and add the provolone, parsley, and basil. Mix well.
- Once the eggplants are cooked, stuff them with the sausage mixture and return to the oven for 10-15 minutes or until the cheese is melted and bubbly.
- Let them cool for a few minutes before serving. Enjoy!
